Sophie's Polish Apple Cake

1 1/2 cups Mazola oil
2 cups sugar
3 eggs
1 tsp vanilla

Blend oil, sugar, eggs and vanilla.

Add and blend together:

3 cups regular flour
½ tsp salt
1 tsp baking soda
1 tsp baking powder

Finally, add and gently blend:

4 cups peeled and diced McIntosh apples
1 cup chopped walnuts
1 cup chopped maraschino cherries

Fill a greased and floured tube pan and bake at 350 degrees for 1 1/4 hours or until toothpick inserted in cake comes clean.


Kiflicky (Polish Cookies)

1/2 lb. Butter 3 1/4 oz. yeast
6 cups sifted flour 1 tbsp. sugar
3 eggs 1 tsp. salt
1/2 cup sour cream 1 tsp. vanilla
1 cup warmed milk 1/2 cup sugar and 1 tsp. cinnamon


In separate container warm milk and sour cream. Add sugar and yeast.

Blend butter and flour. Add salt. Beat egg yolks, add to flour mixture. Add vanilla. Then add yeast mixture from above. Knead lightly on floured board. Form into four balls and let sit about one hour at room temp. Then refrigerate at least two hours. One at a time roll out the ball of dough in flour and some of the cinnamon mixture. Cut into pieces about 2 in. by 2 in. Place filling in center, seal and roll in sugar/cinnamon mixture. Place on ungreased cookie sheet and bake at 350 degrees for 20 mins. Cool.

Filling can be ground nuts with honey, apricot , figs or other preserves.
